有脂溶性的火锅调味料有干辣椒、豆瓣、花椒、姜、蒜、豆豉等。但应该指明,上述调味料也具有被水溶解的属性,是具有双重属性的调味品。

水溶性就是通过水传导加热,以熬煮的方式将调味料煮出味来,水是有极性的,它作为溶剂能溶解很多物质,并在加热过程中使各种调味料中的水溶性风味物质混在一起,构成了特有的鲜香味。水在汤卤中作为主要溶剂,起着综合风味的作用。在火锅调味料中属于水溶性的有精盐、味精、鸡精、胡椒粉、黄酒、醪糟、冰糖等。这些调味品是在锅中掺了鲜汤后,依序投入汤中溶化熬煮出味。

根据上述对火锅中调味料的属性和特点的分析,在熬制火锅汤卤时,应先将脂溶性的调味料辣椒、豆瓣、姜蒜、豆母,豉下锅用油炒至油色红亮、酥香味出时再掺入鲜汤,然后分别投入水溶性的调味料,用中火或小火慢慢熬煮,一直至火锅汤卤冒“果子泡”时,这时的卤汁油水交融,红而发亮,各种味道基本上也熬出来了。

从以上看,不同调味品挥发的持久时间不同,因此我们在熬制火锅汤卤时应注意下料的顺序和分别掌握不同调味品的熬制加热时间。同时因为随着受热时间加长,调味品中的挥发性物质也逐步挥发掉,致使味感减弱,因此时添加调料补充挥发掉的成分,把味道保持在一个相对稳定的水平上。
